Mayor Asks Restaurants to "Think Outside the Bottle"

(KCPW News) It's tap water or nothing for customers at fifteen Salt Lake restaurants, including the entire family of Gastronomy eateries. All have taken a pledge to stop serving bottled water in response to a letter from Salt Lake City Mayor Rocky Anderson. Gastronomy owner Tom Guinney says he made the decision without any thought to revenues his restaurants might lose:"At Gastronomy you always have gotten a glass of ice tap water on your table," says Guinney. "Is there going to be an impact on revenues? Quite candidly I didn't even ask the question.
Today, Anderson announced a citywide campaign to encourage more restaurants to serve only tap water. Anderson says drinking water from bottles is wasteful and irresponsible when Salt Lake City's tap water is some of the best-tasting in the country.
In addition to clubs and restaurants, Anderson wants city residents to take the no-bottled-water pledge online at www.knockoutbottledwater.com.
